Simple Sandwich Bread Recipe
Ingredients
100 g sourdough starter
16 oz warm filtered water
¼ cup cane sugar
1½ tbsp yeast
¼ cup avocado oil
850 g unbleached flour
1½ tsp salt

Instructions
Step 1 – Prepare Warm Water
Use cold filtered water (16 oz) from the fridge.
Microwave in a glass jar for 1 min 30 sec until temperature reaches 120–130°F (this helps dissolve sugar).
Step 2 – Activate Yeast
In a mixer bowl, combine warm water and ¼ cup cane sugar. Mix well until sugar dissolves (about 1–2 min).
Add 1½ tbsp yeast and whisk. Let sit 5 min to bloom.
Step 3 – Mix Wet Ingredients
Whisk in ¼ cup avocado oil.
Whisk in 100 g sourdough starter.
Step 4 – Prepare Dry Ingredients
In a separate bowl, whisk together 850 g flour and 1½ tsp salt.
Step 5 – Combine Dough
Add dry mixture to the mixer bowl.
Mix on low speed for 5 min.
If dough is sticky, add 25 g extra flour at a time until smooth.
Step 6 – Shape Initial Ball
Turn dough out onto a lightly floured surface.
Gently roll dough into a ball by folding edges under until smooth, push and pull the dough to form a tight smooth ball.
Step 7 – First Rise
Lightly oil mixing bowl. Place dough ball top-side down into bowl to coat, then take the dough ball out and replace into bowl so oiled side is up.
Cover with towel and let rise until doubled (about 60 min).
Step 8 – Punch & Divide
Punch down dough.
Divide into 2 equal parts. I like to use a scale for this part so the loaves are equal.
Step 9 – Shape Loaves
Flatten each piece into a rectangle, then roll rectangle into a log shape using a bench scraper.
Flatten log into a longer rectangle and roll again into a tight log.
If too short, gently pull ends outward to make longer.
Shape to fit your loaf pans.
Step 10 – Second Rise
Grease 2 loaf pans. Place loaves inside.
Let rise until doubled (60 min).
Step 11 – Bake
Preheat oven to 350°F.
Bake uncovered for 30 min or until golden brown.
Step 12 – Cool
Remove from pans immediately. Place on wire racks.
Cool for at least 1 hr before slicing.
Optional: brush with melted butter after cooling slightly, I highly suggest including this part, it keeps your bread crust nice and soft.
